Frisella, or “frisedd” in local dialect, is a regional delicacy from the south of Italy (Puglia and Basilicata regions). Frisella is a dry twice-baked, ring-shaped bread made with simple ingredients: semolina, water, salt and yeast. Frisella might be assimilated to bruschetta, but with the difference that it needs to be soaked (for at least 5-10 seconds) to soften it before being ready to be seasoned.
Nonna's Lab suggests you to try frisella in the most traditional version: rubbed garlic, smashed cherry tomatoes, olive oil, salt and oregano.
