Ricotta and spinach cannelloni are the most common vegetarian alternative to lasagna. Cannelloni are made with a lasagna sheet, filled with ricotta, spinach, parmesan, egg, nutmeg, salt and pepper and then rolled to form a short wide tube (cannelloni literally means “large reeds”). Once cannelloni are filled, they are covered with béchamel sauce and baked.
