Coppa or Capocollo is made pretty much everywhere in Italy. It's made with pork neck that is seasoned and massaged with salt and spices (mostly pepper) and then, even if the meat is not minced, it's bagged in a natural gut and dry-aged.
Coppa or Capocollo is, for us, probably one of the best charcuterie for an aperitivo or to fill up a panino or, much better, a slice of our Focaccia Pugliese
We slice all our charcuterie freshly when ordered to keep the flavors at their best, just like in every real Italian "Salumeria"
