Provolone Auricchio is one of the most appreciated cheeses in Italy and it's made with cow milk. The "Dolce" version has a delicate milky flavor.
The flavor and the consistency of Provolone Auricchio, make this cheese perfect for many different recipes. It's amazing on a piece of bread, even better on a slice of warm focaccia, but it's also amazing for cooking. We use it as a filling for our fantastic and famous "bombette".
